Carolina Pateman Ivars keeps a Roman villa winery on Sierra Bernia that her father found in ruins and refused to let go. There is no electricity. The kitchen cooks over fire and wood. Each September the grapes are trodden by foot, by candlelight, exactly as they were trodden on this ground two thousand years ago. It would be easy to call this a re-enactment. It is not: it is simply the winery still working, having never stopped, on the terms it was built for. Nothing here has been reconstructed for visitors. It has been kept.
