Miguel Ángel García González had a career in graphic arts. He left it to return to his family's olive groves in the mountains above Benifallim, and to rebuild them through regenerative dryland farming: no irrigation, working with what the slope and the rain give. He treats the grove as a biodiversity project rather than a crop, growing native olive types that most producers replaced decades ago for yield. The soil beneath the trees is alive again, and he will tell you that this is not a philosophical point. It changes the taste.
