Vicente Todolí was the director of Tate Modern. He is now the caretaker of over four hundred citrus varieties in Palmera, the most significant private collection of its kind in the world. The instinct is the same one that built exhibitions: find what matters, understand why it matters, keep it, and put it where people can see it. Except these works are alive, they need water and grafting and time, and if the collection is lost there is no vault holding a second copy. Every variety here is a flavour that exists nowhere else, protected by one man's attention.
