Ana Climent grows cacau del collaret and cacaua, native Valencian peanuts, from seeds her family has kept for a hundred years. She does all of it: grows, harvests, dries and roasts, on family soil in La Granja de la Costera. The crop had almost disappeared, which is what usually happens to a variety that is slower, smaller and harder than the industrial alternative. What she is protecting is not only a flavour. It is memory, biodiversity, and a plant that turns out to be more resilient to a changing climate than the thing that replaced it.
